摘    要:目的]研究汽爆处理对羽毛角蛋白二级结构的影响,为其体外消化率的提高寻找依据。方法]采用FTIR技术研究羽毛汽爆处理前后的光谱行为,经去卷积和曲线拟合等数学方法进一步处理后,得到其α螺旋、β转角、无规卷曲和β折叠的相对含量。结果]经汽爆处理后,羽毛体外胃蛋白酶消化率显著提高;从二级结构的变化可看出,羽毛角蛋白经汽爆处理后β折叠含量明显减少,无规卷曲含量增加。结论]汽爆处理后,羽毛角蛋白二级结构的改变可能是其消化率提高的原因。

Effects of Steam Explosion Treatment on Secondary Structure of Feather Keratin by Fourier Transform Infrared Spectrum

Abstract:Objective] To explored the effects of steam explosion treatment on secondary structure of feather keratin by using fourier transform infrared(FTIR) spectrum technology,and provide reference for increasing pepsin digestibility of feather keratin.Method] The infrared spectra of feather was observed before and after steam explosion treatment by FTIR technology.And the relative contents of the α-helix,β-turn,random coil and β-sheet of feather keratin were determined after deconvolution and curve fitting.Result] After steam explosion treatment,the pepsin digestibility rate of feather keratin was increased greatly.The β-sheet content was decreased but random coil content was increased.Conclusion] After steam explosion treatment,the changes of secondary structure may be one reason for increasing pepsin digestibility of feather keratin.
