| 摘 要： | 目的]为了研究草科鸡的肉用性能。方法]测定13周龄草科鸡的屠宰性能和肉用性能,并分析了肉用性能间的相关性。结果]草科鸡公鸡的活重、腿肌重和全净膛重都极显著高于母鸡,屠体重显著高于母鸡,但母鸡的皮下脂肪厚却显著高于公鸡。母鸡的屠宰率、半净膛率和胸肌率均比公鸡高,但公鸡的腿肌率高于母鸡。活重与屠体重、腿肌重、半净膛重、全净膛重呈极显著正相关,而与皮下脂肪厚呈极显著负相关。屠体重与腿肌重、半净膛重、全净膛重呈极显著正相关,而与皮下脂肪厚呈显著负相关。胸肌重与腿肌重呈极显著相关,而与全净膛重呈显著相关。腿肌重与半净膛重和全净膛重呈极显著相关,而与皮下脂肪厚呈显著负相关。半净膛重与全净膛重呈极显著相关。结论]该研究为草科鸡的保护、开发与利用提供依据。

| Abstract: | Objective] The aim of the research was to study the meat performance in Caoke chicken.Method] The slaughter performances and meat performances in 13-week-old Caoke chicken were determined and the correlations among meat performances were analyzed.Result] The live weight,leg muscle weight and whole net thorax weight of Caoke cock were extremely significantly higher than that of hen and the carcass weight of cock was significantly higher than that of hen,but the subcutaneous fat thickness of hen was significantly higher than that of cock.The slaughter rate,half net thorax weight rate and breast muscle rate of hen were all higher than that of cock,but the leg muscle rate of cock was higher than that of hen.Live weight showed extremely significant positive correlations with the carcass weight,leg muscle weight,half net thorax weight and whole net thorax weight,but it had an extremely significantly negative correlation with the subcutaneous fat thickness.The carcass weight showed extremely significantly positive correlations with leg muscle weight,half net thorax weight and whole net thorax weight,but it had an extremely significant negative correlation with the subcutaneous fat thickness.Breast muscle weight showed an extremely significant correlation with leg muscle weight and a significant correlation with whole net thorax weight.Leg muscle weight had extremely significant correlations with half net thorax weight and whole net thorax weight and a significantly negative correlation with the subcutaneous fat thickness.Half net thorax weight had an extremely significant correlation with whole net thorax weight.Conclusion] This research provided basis for the protection,development and utilization of Caoke chicken. |
