纳豆冻干粉的安全性研究

摘    要:用菌种BacillusNatto培养纳豆 ,测定了纳豆激酶的活性 ,并将纳豆加工成冻干粉 ,进行安全性试验 ,结果证明纳豆冻干粉对小鼠实际无毒 (LD5 0 >10g/kg) ,骨髓微核试验和精子畸形试验结果呈阴性

Abstract:The Natto was fermented by B.N.10 and the fibrinolytic activity of nattokinase was measured. The Natto was processed to dehydro freezing powder and the experiment in toxicology was done. The conclusion was that the natto dehydro freezing powder had no toxicity (LD50>10g/kg body weight). And it had no mutagenicity with the results of the micronucleus test of bone marrow cell and sperm shape abnormality test in mice.
