云南烟区KRK26类胡萝卜素在烘烤中的降解及其与叶绿素降解的相关性

摘    要:以分光光度法研究了云南5个烟区津巴布韦烤烟品种KRK26成熟中部叶片类胡萝卜素在三段式烘烤中的相对降解速率、总降解量、总降解率和烘烤后残余量及其与叶绿素降解的相关性.结果表明:不同烟区KRK26类胡萝卜素在烘烤中相对降解速率间的差异和在烘烤不同阶段相对降解速率间的差异均未达到显著水平.不同烟区KRK26类胡萝卜素的相对降解速率一般小于其叶绿素,并且与各自叶绿素相对降解速率的相关程度不一致.保山和文山烟区KRK26类胡萝卜素的降解速率最高蜂出现在变黄前期,景谷和临沧的在变黄后期,玉溪的在定色前期.在整个烘烤中,不同烟区KRK26类胡萝卜素的总降解量、总降解率和残余量不同,并且,总降解量间的差异达到显著水平,总降解率均小于其叶绿素,残余量均大于其叶绿素,类胡萝卜素和叶绿素的残余量间成负相关.所以,云南不同烟区KRK26叶片类胡萝卜素降解的产香潜力不同.本研究结果可为云南烟区KRK26香气品质的评价与调控、适宜种植区域的选择和烘烤工艺的优化提供参考.
