摘    要:板栗采收后,果皮作为保护种子的屏障首先迅速失水,贮藏一个月后种子失重加快。在贮藏期,板栗的生理活动分三个阶段:第一阶段从采后到11月中旬,前期呼吸旺盛,淀粉水解酶活性较高,栗果损失较大;第二阶段从11月中旬到12月底,种子处于自然休眠状态。呼吸作用较弱,α-淀粉酶处于较低的活性水平,β-淀粉酶稳定在相对低的水平,栗果风味如初,腐烂率较低;进入贮藏后期,板栗种子休眠状态解除,呼吸旺盛,α-淀粉酶,β-淀粉酶活性增高,可溶性糖含量增多,栗果甜味明显增强,果实干缩,部分种子萌动或出现“石灰化”现象,可食性差。本文同时对板栗的贮藏与其生理生化变化的关系进行了讨论。

Abstract:After chestnut harvest, first the pericarp losses water rapidly, a month later the seed losses weight rapidly. At chestnut storage period, the phsiological activity is divided into three stages: stage Ⅰ(from postharvest to the mid of November), with high respiration, high amylase activity, big loss of chestnut; stage Ⅱ(from the mid of November to the end Of December), with nature dormancy,low respiration, low amylase, the chestnut just as before in quality;stage Ⅲ(the end of the storage), with dormancy a wakening,high respiration, high amylase, high soluble suger content, increased taste of sweet,dryed chestnut,some seeds germination or calcification.
