摘    要:【目的】筛选出适合北京地区栽培的营养丰富、口感优质的甜瓜品种。【方法】测定25种甜瓜果肉部分的可溶性固形物、维生素C、可溶性糖、有机酸和可溶性蛋白5个营养指标的含量,运用方差分析,比较不同品种甜瓜营养指标的差异性。并利用模糊数学隶属函数法计算不同品种甜瓜每个营养指标的隶属函数值,对其营养品质进行综合评价。【结果】结果表明,不同品种甜瓜同一营养物质含量差异明显。‘京蜜11’其在可溶性糖、可溶性固形物和有机酸含量方面均占明显优势。【结论】‘京蜜11’营养品质为最优,其口感较好,符合主流审美,可在北京地区推广栽培。

Abstract:Objective]In order to screen out the nutrient-rich,high-yielding and high-quality Cucumis melo L suitable for cultivation in Beijing,and provide some theoretical basis for the high-quality breeding of melon.Methods]The contents of soluble solids,vitamin C,soluble sugar,organic acid and soluble protein in 25 muskmelon sections were determined.The nutritional indexes of different varieties of muskmelon were compared.The fuzzy mathematics membership function method was used to calculate the content of soluble solid,Membership function of nutritional indicators of values,the nutritional quality of a comprehensive evaluation.Results]The contents of soluble solids,vitamin C,soluble sugar,organic acid and soluble protein in 25 kinds of melon were measured.The variance analysis was used to compare the nutritional indexes of different varieties of melon.The fuzzy membership function was used to calculate the membership function value of each nutritional index of different varieties of melon,and its nutritional quality was evaluated comprehensively.Conclusion]‘Jingmi11’ nutritional quality as the best,its taste is better,in line with the mainstream aesthetic,can be promoted in Beijing cultivation.
