葡萄皮色素的提取及其性能研究

本研究从葡萄皮中提取分离出了葡萄皮色素，并对它的溶解性、含量、吸收光谱和不同条件下的稳定性等进行了研究。结果表明，葡萄皮色素属花色苷类色素，溶于水和乙醇，不溶于油脂。干色素约占葡萄皮鲜重的４％。这类色素在水溶液中耐光、耐氧，但耐热性较差；而它在乙醇溶液中，耐氧、耐热，但不耐光照。化合物Ｙｓｓｑｎ可显著提高葡萄皮色素在乙醇中的耐光性。

STUDY ON PIGMENT OF GRAPE SKIN

The article report that pigment of grape skin is extracted and separated from grape skin;and we have studied the pigment the solubility,the content,the absorption spectrum, and the stability under different condition.The result prove that pigment of grape skin belong to anthocyanidins.The anthocyanidins dissolve in water and alcohol; it does not dissolve in soil.Content of dry pigment is about four gram in a hundred gram grape skin.In water,the anthocyanidins risist light,risist the oxygen,but heat -resistance is weaker.AND the in alcohol the anthocynidins resist the oxygen,resist heat,but light -remarkebly is very weaker.Compound- Yssqn can improve remarkebly light -resistance of grape skin.
