大枣—豆乳复合饮料的试验研究

摘    要:大枣──豆乳复合饮料是根据大枣富含Vc,豆乳富含蛋白质的优点而制作的。试验表明:选用0.3%的CMC作稳定剂,取枣泥25%,豆乳15%,白砂糖15%,柠檬酸0.2%为制作此种饮料的最佳配方。产品色泽、风味俱佳,组织状态稳定,是一种质优价廉的营养保健饮品。

Abstract:Based on the charactristics of VC containing in fresh Chinese jujube and protein containing in the soga-beau milk.The blending drink of Chinese jujube and soga-bean milk,with high quality nourishing was made.The experiment shows that the best percentase in the drink is 0.3% of CMC,25% of jujube paste,15% of soga-bean milk,15% of sugar,and 0.2% of citric acid.The product is a nutritional health drink,which is delicious,colorful and in good tissue state.
