摘    要:研究了不同浓度梯度的亚硫酸氢钠、柠檬酸、EDTA、抗坏血酸4种抑制剂对清徐黑鸡心葡萄多酚氧化酶(PPO)活性的抑制效果,旨在单因素试验的基础上,通过正交试验进一步优化黑鸡心葡萄在贮藏、运输过程中防褐变添加剂的配方。结果表明:柠檬酸、EDTA、抗坏血酸对PPO活性表现出较好的抑制效果,3种抑制剂联合作用的最佳组合为A1B2C2,即柠檬酸0.04mmol·L-1,EDTA0.08mmol·L-1,抗坏血酸0.08mmol·L-1。PPO活性的抑制率达到85.67%。

Abstract:The effects of inhibitors including sodium hydrogen sulfite, citric acid, EDTA and ascorbic on polyphenol oxi- dase activity (PPO) in heart-shaped Qinxu black grapes were investigated. Based on the results of single factor experi- ment, orthogonal experiment was applied to optimize the formula of anti-browning additive for the storage and trans- portation of black heart-shaped grape . Results indicated that citric acid, EDTA and ascorbic acid showed better inhibi- tion effect on PPO activity, the best combination for inhibition was A1 B2 C2, namely citric acid tendency for 0. 04 mmol· L-1 , EDTA 0.08 mmol · L-1 tendency, L ascorbic acid tendency for 0.08 mmol · L-l , with PPO activity inhibition rate up to 85.67%.
