膳食纤维的保健功能及在食品添加中的应用

摘    要:膳食纤维被称为继碳水化合物、蛋白质、脂肪、水、矿物质和维生素之后的"第七大营养素",因其独特的保健功能以及在食品添加中的重要作用,膳食纤维日益为人们所重视。笔者阐述膳食纤维的保健功能,着重对目前在食品领域重点研究与广泛应用的魔芋膳食纤维、菊粉、抗性淀粉等三种重要膳食纤维的特性、应用与前景进行探讨。
