壳聚糖涂膜对甜瓜采后生理及品质的影响

摘    要:【目的】研究壳聚糖涂膜处理对甜瓜采后生理及贮藏品质的影响。【方法】以哈密瓜(Cucumis meloL.ssp.melo Pang)西州蜜25号为试验材料,壳聚糖浓度分别为10、20和30 g/L的溶液对甜瓜进行涂膜处理,研究壳聚糖涂膜对采后甜瓜果实呼吸速率、乙烯释放量、硬度、可溶性固形物含量(SSC)、相对电导率、VC含量、失重率及腐烂率的影响。【结果】壳聚糖涂膜处理抑制甜瓜果实的呼吸速率,延缓呼吸高峰的出现;降低果实乙烯释放量,推迟乙烯高峰的出现;20和30 g/L壳聚糖涂膜处理甜瓜果实硬度显著高于对照,可溶性固形物含量,VC含量的在整个贮藏阶段均高于对照果实,降低了甜瓜果实相对电导率、失重率、腐烂率的上升幅度。【结论】用20 g/L壳聚糖溶液涂膜处理甜瓜,能够保持甜瓜贮藏品质,降低腐烂,延缓果实衰老。

Abstract:【Objective】The paper was to study the effect of chitosan coating treatment on storage quality and physiology of Hami Melon during post-harvest.【Method】hami melon 'Xizhoumi No.25' was used to investigate the effect of chitosan coating on storage and physiology of post harvest melon film dipped into chitosan solution of the concentration was 10 g/L,20 g/L,30 g/L. Melon coated with chitosan of respiratory rate,ethylene releasing quantity,firmness,soluble solids content(SSC),electrolyte permeability,Vitamin C content,weight loss and decay rate were detected.【Result】The respiration rate of melon treated with chitosan solution were inhibited,the appearance of the peak of respiration were delayed;the ethylene releasing were suppressed;appearance of the peak of ethylene were delayed;firmness of melon fruit treated with 20 g/L and 30 g/L chitosan solution were higher than that of control fruits,and the SSC and VC content were always higher than that of control fruits during storage.The increasing of the electrolyte permeability,weight loss and decay rate of melon fruit were inhibited.【Conclusion】The treatment of chitosan was able to maintain the quality and surpress the raising of rot rate.
