鹰嘴豆种子蛋白分析

摘    要:利用SDS-聚丙烯酰胺凝胶电泳(SDS-PAGE)对不同品种的鹰嘴豆的种子蛋白进行分析,结果显示:6种鹰嘴豆种子的蛋白质主要由清蛋白、球蛋白、盐溶和醇溶蛋白质组成,其中清蛋白和球蛋白种类较多,盐溶蛋白和醇溶蛋白种类较少.在清蛋白和球蛋白的种类方面,165号(卡布里型),阿克苏鹰嘴豆(卡布里型),88-1(迪西型)和阿瓦提2号鹰嘴豆(卡布里型)较185号(迪西型)和176号(迪西型)多;在盐溶蛋白和醇溶蛋白种类方面,6个品种的蛋白种类均较少.

Abstract:Using SDS-polyacrylamide gel electrophoresis(SDS-PAGE)were used to analyse the different species of chickpea seed protein.The results showed that:six kinds of chickpea seeds from the main protein albumin,globulin,prolamin and salt-soluble proteins,composed of albumin and globulin,salt-soluble protein and prolamin,among which there were more albumin and globulin;there were less salt-soluble protein and prolamin protein.As in the numerical aspect,165(Kabuli chickpea),Aksu chickpea(Kabuli chickpea),88-1(wrinkle tablets) and Awati 2 chickpea(Kabuli chickpea),were more than 185(Desi chickpea) and 176(Desi chickpea) occupied majority,compared with the salt-soluble proteins and prolamin.There were less protein of six types.
