酸马奶中乳酸菌的分离、纯化与鉴定

摘    要:分别从乌鲁木齐市水西沟镇、伊犁地区、吉尔吉斯斯坦和哈萨克斯坦采集的酸马奶样品中,分离纯化得到乳酸菌21株。经形态学、生理生化特性研究分别鉴定为乳杆菌属(Lactobacillus)17株,分别为干酪乳杆菌(L.casei)、消化乳杆菌(L.alimentarius)、詹氏乳杆菌(L.jensenii)、耐酸乳杆菌(L.acetotolerans)、戊糖乳杆菌(L.pentosus)、德氏乳杆菌德氏亚种(L.delbrueckiisubsp.delbruerkii)、玉米乳杆菌(L.zeae);乳球菌属(Lactococcus)1株,为植物乳球菌(L.plantarum);肠球菌属(Enterococcus)1株,为粪肠球菌(E.faecalis);明串珠菌属(Leuconostoc)1株,为肠膜明串珠球菌(L.mesentaroides)中的葡聚糖亚种(subsp. mesentaroides);链球菌属(Streptococcus)1株,为嗜热链球菌(Streptococcus thermophilus)。

Abstract:21 strains of lactic acid bacteria were isolated from kumiss sample which was gathered from Urumqi、Ili,Kirghizstan and Kazakhstan.All of them belonged to Lactic acid bacteria. According to the morphological characters,physiological and biochemical properties,as well as chemical characteristics,they were identified as 5 species,namely,Lactobacillus(17 strains),they are L.casei,L.alimentarius,L.jensenii,L.acetotolerans,L.pentosus,L.delbrueckii subsp.delbruerkii and L.zeae;Lactococcus(1 strain),L.plantarum;Enterococcus(1 strain),E.faecalis;Leuconostoc(1 strain),L.mesentaroides;Streptococcus(1 strain),Streptococcus thermophilus.
