新疆冬小麦品质性状分析与评价

摘    要:选用 4 7个不同地区的冬小麦品种 (系 ) ,就其 13个品质性状进行了研究。结果表明 ,新疆自育品种的蛋白质含量、湿面筋含量、沉淀值低于内地品种 ,但面团形成时间、稳定时间、衰弱度、最大抗拉强度、拉伸面积、总评价值等优于内地品种 ;与国外优质小麦品种相比 ,新疆自育品种的蛋白质含量较高、尤其是湿面筋含量和出粉率最为突出 ,但在一些重要加工品质性状方面 ,如沉淀值、形成时间、稳定时间、衰弱度和总评价值等 ,与国外优质品种存在不小差距。新疆冬小麦品质基本属于中筋力范围。但新疆自育品种中也存在着品质综合表现较好的材料 ,如新冬 2 3号。相关分析表明 ,沉淀值与抗拉强度呈显著正相关 ,与吸水率、面团形成时间、面团稳定时间、最大强度、拉伸面积、评价值存在极显著正相关 ,与衰弱度呈极显著负相关 ,与其它性状相关性均不显著

Analyze and Evaluate Quality Characters of Winter Wheat in Xinjiang
Abstract:In this paper ,thirteen quality characters of 47 different reign of winter wheat were analysed.The result show that the protein content?wet gluten content?sedimentation value of varieties of Xinjiang are less than them of varieties of other province,but developdent time?stability time?degree of softening?maximum resitence extensibility is opposite.compared with foreign varieties,the protein content?wet gluten contenet and flour yield of varieties of Xinjiang are higher,but some important quality characters(e.g.sedimentation value?development time?stability time?evaluation value and degree of softening) are lower.Quality type of Xinjiang varieties are mostly belong to middle-quality varieties.hower,there are some excellent varieties,such as XinDong23 being with the best performances in some important quality characters.Correlation analysis show that there is significantly positive relationship between sedimentation value and dough developmen time?stability time?maximum resistence extensibility?evaluation value,and significantly negative relationship to wet gluten content and degree of softening,but no significant relationship between sedimentation value and the other characters.
