| 摘 要： | 介绍了食品中主要真菌毒素的毒理,比较了中国食品安全国家标准和国际食品法典委员会(CAC)标准中真菌毒素限量指标,研究并确认了新、旧版真菌毒素国家标准之间以及新版真菌毒素国家标准与CAC最新限量标准之间的差异,为提高中国食品安全监管水平、保护人民健康、有效应对国际贸易及国外技术性贸易壁垒提供依据。

| Abstract: | Toxicity of main mycotoxins was introduced.Maximum levels（MLs） in Chinese national food safety standard were also compared with the Codex Alimentarius Commission（CAC）mycotoxin standard.Therefore,the difference between revised and previous Chinese standard for mycotoxin,as well as the difference between the revised Chinese standard and CAC standard for mycotoxin were studied and confirmed.All these studies will help China to facilitate monitoring food safety,to protect human health,and to deal with technical barrier in world trade. |
