| 摘 要： | 高粱是世界上广泛种植的主要粮食之一,其中丹宁是影响高粱精深加工的重要因素。高粱丹宁作为膳食用时,会降低摄食率和营养物质的利用率。而在生物系统中,具有收敛、止血和抗氧化作用。本文就高粱丹宁的结构、种类、对高粱的影响及其检测和去除方法进行综述,以期为高粱丹宁的研究做出参考。

A review on the research progress of sorghum tannin |

| Abstract: | Sorghum is one of the main grain crops widely cultivated in the world, and tannin is an important factor affecting the deep processing of sorghum. When sorghum tannin is used as a food, it will reduce the intake rate and the utilization rate of nutrients. In biological system, it has the functions of astringency, hemostasis and anti-oxidation. In this paper, the structure, species, influence on sorghum, detection and removal methods of sorghum tannin were reviewed, in order to provide reference for the research of sorghum tannin. |
