摘    要:研究了油木奈]果实在室温、(8±1)℃和(3±1)℃贮藏温度下呼吸强度、乙烯生物合成、脂氧合酶活性、果实硬度和乙醇含量等变化特点.分析了它们与油木奈]耐贮性的关系.并探求油木奈]果实最佳冷藏温度,结果表明:在3个贮藏温度下,油木奈]果实呼吸速率呈双峰型,而内源乙烯释放速率主要表现出单个大高峰,其与第2次呼吸跃变峰和ACC氧化酶活性高峰在发生时间上几乎具有同步性,而LOX活性峰与ACC含量积累峰具有协同性,并发生在乙烯和呼吸跃变前1周左右,可作为果实转向衰老和不耐贮藏前期的预兆;(3±1)℃比(8±1)℃下冷藏显著地抑制了各指标的变化.并推迟了呼吸、乙烯和LOX跃变期的到来,有效地延缓了果实后熟衰老进程,使油棒贮藏期延长到77d以上.并未发现果实褐变。因此,油木奈]果实最适冷藏温度以(3±1)℃为佳。

Study on Changes of Indexes of Postharvest Physiology and Their Relationship with Storability in You Nane Fruit Stored at Different Temperatures

Abstract:Changing characteristics of respiratory intensity,ethylene biosynthesis,lipoxygenase activity,fruit firmness and alcohol content in you nane fruit stored at(3±1)℃,(8±1)℃ and room temperatures were studied in this paper.Furtherly,the relationship between above indexes with the storability of you nane was analysed and the optimum temperature of cold storge for you nane was concluded.The results showed that under the three storage temperatures,the respiratory intensity of you nane exihibed two climacteric peaks,while there was mainly one big peak for ethylene release rate,which kept synchronization with the second respiratory peak and ACC oxidase activity peak.There also showed that the cooperativity between the big peak of LOX activity and ACC accumulation peak,both of which appeared earlier a week or so than the climacteric peak of ethylene production and respiratory rate.Hereby they were treated as the omen of senescence transition and storage intolerance for you nane fruit.Moreover,the cold storage temperature of(3±1)℃ inhibited more significantly the changes of above indexes than(8±1)℃ and postponed the climacteric date of respiratory intensity,ethylene release rate and lipoxygenase activity.As a result,the process of ripening and senescence and the storage date of you nane fruit was delayed effectively at least 77 days,and no browning fruit was found.Therefor,the optimum temperature of cold storage for you nane was thought as(3±1)℃.
