摘    要:选取大蒜精油、牛至油、丁香油3种植物精油,介绍了它们的性质、化学成分、抑菌机理以及在食品保藏方面的应用,为鲜蛋涂膜保鲜剂的材料筛选提供参考。

Abstract:Garlic essential oil,origanum oil and eugenia oil were selected,their character,chemical composition,antibacterial mechanism and application to preservation of food were introduced,for the reference of filtration to the antistaling agent used in fresh eggs with film.
