摘    要:研究结果表明,不同蔬菜,同一蔬菜不同品种,同一植株不同部位,以及不同栽培环境,NO3-含量均有较大差异,菠菜不同遗传型可达10倍以上。叶用芥菜、苋菜品种间含量差异较小。菠菜NO3-含量,以叶肉部分最低,根部次之,叶柄部分最高,叶用芥菜因类型不同而有变化。不同地区土壤和管理水平对菠菜NO3-含量可相差4倍左右,秋栽菠菜比冬栽的NO3-含量明显下降,而喷施微量元素对菠菜NO3-含量无显著差异。

Abstract:This research showed that the nitrate content was affected by varieties, orgen tissues and cultivation environments. As for spinach, the nitrate content difference among varieties reached more than ten times, but in lesf mustard and edible amaranth it was not very significant. There was significant difference among different orgen tissues in spinach:AS the nitrate content, the leaf pulp section was the lowest that of root section ws and that of leaf stalk was highest. Fertilization and soil fertility greatly affected spinach nitrate content, but microelement didn't. In addition, the nitrate content of aurumn-cultivated spinach was lower than that of winter-cultivated spinach.
