摘    要:食用菌兼具营养及药用价值,被全球公认为是良好的营养来源,其产品广受市场关注。食用菌的保鲜技术也在进一步发展之中。本文对食用菌物理保鲜技术进行综述,并进一步提出其发展趋势。

Abstract:Edible fungi are globally recognized as good sources of nutrition due to the nutritional and functional components.Nowadays,edible fungi have gained increasing attention and the preservation technology has been in development.In this paper,the technological development for the new physical preservation of edible fungi in the recent several years was reviewed and the future direction was forecasted.
