梨枣果实采后生理研究

摘    要:通过对采用塑料薄膜包装的低温贮藏、常温贮藏和常温裸放果实分别进行呼吸强度、失水率、细胞膜透性及过氧化物酶活性等项目的测定,研究梨枣果实在采后成熟衰老过程中生理生化变化的规律。结果表明,采用梨枣果实在常温裸放情况下,具有较高呼吸强度和失水率、果实快速衰老软化。塑料薄膜包装能强烈地抑制果实水分蒸发,对果实呼吸强度有一定影响;常温袋藏果实呼吸强度略有增强,低温袋藏呼吸强度被显著抑制。低温袋藏和常温袋藏降低了果实细胞膜透性和推迟了过氧化物酶活性高峰的出现,表明果实衰老与细胞膜透性和过氧化物酶活性的增强有关。

Abstract:According to a physiological and biochemical analysis of respiratory rate, water loss rate, cell membrane permeabolity and peroxidase activity on Li-jujube fruit spread in room temperature, the results showed that Li-jujube fruit spread in room temperature had higher respiratory rate and water loss rate, fruit become senes-cent and soft quickly.Fruit water loss rate was restrained significantly by packaging with plastic bag.Plastic bag had a ceratin effect on fruit respiratory rate with storage bag in low temperature.Plastic bag slightly increased fruit respiratory rate under room temperature condition, but sharply decreased fruit respiratory rate.plastic bag retared the appearance of the peak of cell membrane permeability and peroxidase activity of fruit when it stored in cold storage and room temperature.This results indicated that fruit senescence has relationship with increase of cell membrane permeability and proxidase activity.
