钾与蔬菜品质的相关性研究进展

摘    要:有关钾与蔬菜品质关系的研究主要集中在两个方面:一是钾对蔬菜主要营养成分,包括维生素C、可溶性糖、蛋白质、氨基酸、矿物质和风味物质等的影响及影响机理;二是钾对硝酸盐含量的影响及相关机理。本文综述了以上研究的主要进展。

Abstract:Study on relationship between potassium and vegetable quality mainly focus on two fields: one is the effect and influencing mechanism of potassium on primary nutrient ingredients, include vC, sugar, protein, amino acid, minerals, and flavor compounds. The other is the effect and correlative mechanism of potassium on nitrate content. This paper summarized the above researches as follows.
