甜高粱汁酒精发酵条件初步研究

摘    要:通过甜高粱汁在不同的pH值,接种量、温度、浓度、时间条件下进行发酵和正交优化试验的初步研究,可确定利用甜高粱糖汁生产酒精的发酵条件为,pH5.0,接种量10%,糖汁浓度22%,温度30℃,时间48h,可获得12.8%(v/v)的酒精,发酵率达92.5%。

Abstract:This paper discussed the producing alcohol fermentation conditions by using sweet sorghum juice under different pH,inoculation dosages of yeast,fermentation temperature,sugar concent ration,fermentation times.The proper conditions were pH 5.0,inoculation dosage 10%,sugar concent ration 22%,fermentation temperature 30 and fermentation time 48 h.The production of fuel alcohol was 12.8%(v/v),and the fermentation rate was as high as 92.5%.
