厚皮甜瓜果肉颜色与类胡萝卜素关系的研究

摘    要:对80多个品种的测定结果表明,厚皮甜瓜果肉颜色与色素的含量和组成有密切关系.果肉白色者,类胡萝卜素含量最少;果肉绿色者,除含少量类胡萝卜素外,还含有叶绿素;果肉桔红色者,类胡萝卜素含量较高,早熟品种多在6.74~8.35μg/g鲜重,中、晚熟品种达15.92~23.18μg/g鲜重,且主要为β-胡萝卜素.果肉桔红色与类胡萝卜素含量呈直线回归,r=0.719,达1%显着水平.

Abstract:The content of carotenoid and flesh color of muskmelon fruit with 80 varieties were determined.The carotenoid content, component and flesh color appear to be more closely associated with muskmelon varieties.Contents and components of carot enoid and chlorophyll depended on flesh color of the fruit.The correlation between carotenoid content and flesh color in orange-red flesh muskmelons was highly significant.Correlation coefficient is r = 0 719 and it is significant at 1% level.
