摘    要:分析了野猪肉的营养成分如蛋白质、维生素、矿物质元素含量,并与家猪肉的相应指标作了比较.结果表明:野猪肉的蛋白质,维生素A、E以及矿物质元素Cu、Fe、Zn含量高于家猪肉(P<0.05);在野猪肉中测出了17种氨基酸,其中有7种为必需氨基酸,且必需氨基酸的总百分数为10.40%,而家猪肉中则为6.98%.综合分析可见:野猪肉比家猪肉营养价值更高,加上野猪肉鲜嫩香醇、野味浓郁且不含激素,是理想的绿色营养食品.

Abstract:The content of nutrients such as protein,vitamine,mineral element in boar were analysized,and were compared with pork.Results indicated that: the content of protein,vitamine A and E,and mineral element Cu,Fe,Zn in boar wee signiticant higher than that in pork(P<0.05).in boar 7 amino acids were essential amino acid(EAA).The total content of EAA in boar and pork were 10.40% and 6.98% respectively.It was showed that the nutrient value of boar was higher than that of pork,and since boar meat is fresh,tender,fragment mellow,and without hormone so it will be popular green nourish food for people.
