州河鲤、乌克兰鳞鲤成鱼肌肉营养成分的对比分析

摘    要:通过对州河鲤和乌克兰鳞鲤成鱼肌肉的粗蛋白、水分、灰分、粗脂肪以及氨基酸和脂肪酸构成等进行对比分析,为科学评估其营养品质提供基础数据。结果表明:乌克兰鳞鲤成鱼肌肉中的蛋白质(19.20%)、水分(78.76%)和灰分(1.45%)均极显著地高于州河鲤(18.52%、76.83%、1.20%;P0.01),而州河鲤的脂肪含量(3.76%)又极显著地高于乌克兰鳞鲤(1.79%;P0.01);州河鲤成鱼肌肉脂肪酸的种类、脂肪酸总量和必需脂肪酸含量(11种、2.88%、0.60%)均高于乌克兰鳞鲤(10种、0.64%、0.10%),且州河鲤脂肪酸的营养价值略高于乌克兰鳞鲤;州河鲤和乌克兰鳞鲤都含有18种氨基酸,而乌克兰鳞鲤的必需氨基酸含量、风味氨基酸含量和氨基酸总量(8.3%、7.58%、20.29%)均高于州河鲤(7.53%、6.48%、17.82%),乌克兰鳞鲤蛋白质的氨基酸组成优于州河鲤。综合以上分析可以得出,乌克兰鳞鲤较州河鲤更具有营养学优势。

Abstract:In this study,the contents of the crude protein,water,ash,crude fat,amino acid and fatty acid of the Zhouhe carp and Ukraine scaled carp were analyzed.The results show that the contents of crude protein(19.20%),water(78.76%)and ash(1.45%)in Ukraine scaled carp were significantly higher than Zhouhe carp’s(18.52%,76.83%,1.20%;P〈0.01).But the content of crude fa(t3.76%)in Zhouhe carp was significantly higher than Ukraine scaled carp’s(1.79%;P〈0.01),and the types of fatty acids,the total fatty acid amount and the contents of essential fatty acid in Zhouhe carp(11,2.88%,0.60%)were higher than Ukraine scaled carp’s(10,0.64%,0.10%).The nutrient values of fatty acid in Zhouhe carp are higher than Ukraine scaled carp’s.There were 18 types of amino acids in Zhouhe carp and Ukraine scaled carp.The contents of essential amino acids,flavour amino acids and total amino acids in Ukraine scaled carp(8.30%,7.58%,20.29%)were higher than Zhouhe carp’s,respectively(7.53%,6.48%,17.82%).The amino acid compositions of the protein in Ukraine scaled carp are better than that in Zhouhe carp.In conclusion,the Ukraine scaled carp has more nutriology advantages than Zhouhe carp.
