摘    要:以玉米淀粉为原料,采用酸解压热法制备抗性淀粉,并确定了最佳的工艺条件:选择乙酸为试验用酸,淀粉糊浓度20%,酸浓度0.4moL·L-1,酸解温度60℃,酸解时间5h,并进行冷热循环3次,抗性淀粉最高得率为15.7%。

Abstract:Resistant Starch was produced by raw corn starch.Corn starch was partial acid hydrolysis and autoclaved in the experiment. The optimum condition resistant starch with this method was:Chosen for the experiment with acetic acid,20% starch concentration, acid concentration of 0.4 moL·L-1,acid hydrolysis temperature 60 ℃,acid hydrolysis time 5 h,and for hot and cold cycle three times,the highest resistant starch yield was 15.7%.
