摘    要:探索大豆中胰蛋白酶抑制剂有效、快速的钝化方法.通过正交试验设计研究温度、时间、亚硫酸钠浓度对抑制因子的钝化影响,采用酚红法和国家标准法(GB/T8622-2006)对钝化后大豆中脲酶活性进行定性、定量检测.最优钝化工艺条件为:温度75℃、时间60 min、No2SO3浓度0.03 mol·L-1.亚硫酸钠法是一种简便、...

Abstract:Objective: To explore the effective and rapid passivation of the anti-nutritional factors in soybean.Methods: The passivation conditions were optimized with orthogonal test design concerning temperature,time and sodium sulfite concentration.Determination of urease activity in soybean after passivation with red phenol assay and GB/T 8622-2006 assay.Results: The optimal technological parameters:passivate temperature was 75 ℃,passivate time was 60 min and sodium sulfite concentration was 0.03 mol·L-1.Conclusion: The sodium sulfite method is a feasible and effective passivation treatment.
