大庆市市售蔬菜硝酸盐亚硝酸盐含量调查及评价

摘    要:通过对大庆市市售蔬菜的硝酸盐和盐硝酸盐的含量调查分析,结果表明,大庆市市售各类蔬菜硝酸盐含量依次为根菜类(2107.99mg/kg)>白菜类(1866.43mg/kg)>绿叶菜类(1366.61mg/kg)>葱蒜类(845.31mg/kg)>甘蓝类(627.10mg/kg)>豆类(563.53mg/kg)>茄果类(253.11mg/kg)>瓜类(158.92mg/kg)。蔬菜受不同程度硝酸盐污染,以根菜类污染最严重,其次是白菜类和绿叶菜类,轻中度污染的是葱蒜类、甘蓝类和豆类蔬菜;污染指数在1.08~6.60,多数在2.06以上,瓜菜类和茄果类蔬菜的污染指数均<1,未受硝酸盐污染。各类蔬菜的亚硝酸盐含量都较低,大多数蔬菜亚硝酸盐含量在1mg/kg以下。

Abstract:The analysis on the investigation of nitrate and nitrite in vegetables sold in Daqing city showed that the nitrate concentrations in vegetable samples was in turn root vegetables(2 107.99 mg/kg)>cabbage vegetables(1 866.43 mg/kg)>green leaf vegetables(1 366.61 mg/kg)>onion garlic vegetables(845.31 mg/kg)>kale vegetable(s627.10 mg/kg)>Legume vegetable(s563.53 mg/kg)>fruit vegetable(s253.11 mg/kg)>Melon vegetables(158.92 mg/kg).The vegetables investigated were polluted at different extent by nitrate.The root vegetables were the worst,and the cabbage and green leaf vegetables were worse than other vegetables,and the onion garlic,kale and Legume vegetables were polluted by nitrate.The pollution exponent was in the range of 1.08 to 6.60,which of many vegetables were>2.06,then the pollution exponent of other vegetables was <1,which showed they were not polluted by nitrate.The nitrite concentration in vegetables was very lower,which was less than 1 mg/kg.
