固定化酶的方法及其在食品中的应用研究进展

摘    要:固定化酶在酶促反应中具有很高的应用价值,在酶工程中发挥着重要的作用,已被广泛应用于食品、制药等领域。本文比较了固定化酶与游离酶的优缺点,介绍了酶的固定化方法,综述了固定化酶在食品领域的应用研究进展,并对其应用前景进行了展望。

Abstract:Immobilized enzyme shows positive effect in enzymatic reaction, and plays an important role in enzyme engineering. It has been widely employed in food processing, pharmacy, and so on. This paper compared the characterization of immobilized enzyme and free enzyme, introduced the methods of immobilization of enzymes, reviewed the research progress on the applications of immobilized enzymes in food industry, and propected the application of immobilized enzymes.
