| Abstract: | This paper mainly introduces the principles,structures,characteristics,classifications,developments and productions of mass spectrometer(MS).By listing the uses of analysising of nutrient content in food and testing in food safety,this paper describes its important applications and prospects in the food industry,in order to do a little humble for deepening of MS development and application. |
