摘    要:以贵阳市乌当区下坝乡黑珍珠樱桃为试材,采用聚乙稀保鲜膜(PE)、聚苯乙烯泡沫塑料(EPS)、普通纸盒对樱桃进行包装处理,在0~1℃的条件下贮藏,研究樱桃果实的商品品质及酶活性。结果表明,聚乙烯保鲜膜对樱桃的贮藏有较为显著的保鲜效果,降低了樱桃的呼吸强度和PPO、POD的活性,减少了樱桃VC和还原糖损失,增加了可滴定酸的含量,减缓丙二醛含量的增高,对可溶性固形物含量的影响不显著,既使樱桃的货架期和贮藏期明显延长,又保证了樱桃的品质。

Abstract:Taking the fresh black pearls cherry produced in Xiaba county of Guiyang Wudang as the test materials to study the storage effect on different packaging materials such as PE, EPS and normal paper bag. Storaged under the temperature 0~1 ℃,studied on the cherrys' fruit quality and its enzyme activity. The results showed that PE has a significant effect on keeping fresh. The cherrys' respiration rate, polyphenol oxidase (PPO) and peroxidase (POD) activity were not only reduced, but alsothe vitamin C and reducible suger were receded, the titratable acid content were increased, the malondialdehyde Aldehyde content were slowing down,and there was no remarkable effect on the soluble solids. The shelf life and storage period were prolonged so as to the cherrys' good qulity were ensured.
