摘    要:果蔬贮藏与加工是食品加工技术专业的一门核心课程,对培养食品加工专业学生的专业技能起主要作用。综述了果蔬贮藏与加工课程的实践中存在的问题,提出了相应的改革措施。

Abstract:In food processing technology,the fruit and vegetable storage and processing is a professional core course.It plays the leading role to cultivate students' processing professional skill.This paper reviews existing problems in the course of fruit and vegetable store and process,and probes into its reform measures.
