酸水解小麦辛烯基琥珀酸淀粉酯制备工艺的优化

摘    要:采用正交试验研究了小麦淀粉的酸水解条件,在此基础上对酸水解小麦辛烯基琥珀酸淀粉酯的制备工艺进行了优化。结果表明,小麦淀粉酸水解反应温度为45℃,盐酸体积分数为4%,反应时间18 h;酸水解小麦辛烯基琥珀酸淀粉酯的最佳制备工艺为:反应时间4 h,反应温度34℃,pH值8.0,淀粉乳液质量分数为37%,酸酐加入量为淀粉干基质量的3.0%。该工艺所制备酸水解小麦辛烯基琥珀酸淀粉酯的取代度为0.019 4。

Abstract:Process conditions of hydrolyzed wheat starch are studied.On the basis of these,hydrolyzed octenyl succinic anhydride(OSA) modified wheat starch is prepared using the orthogonal test.The results indicate that the optimum hydrolysis conditions for wheat starch are found as follows: reaction temperature 45 ℃,hydrochloric at 4%,reaction period 18 h.The suitable parameters for the preparation of hydrolyzed OSA modified wheat starch are as follows:reaction period 4 h,reaction temperature 34 ℃,pH of reaction system 8.0,concentration of starch slurry 37%(in proportion to water),amount of OSA 3.0%(in proportion to starch).The degree of substitution is 0.019 4.
