酶法去除马铃薯薯渣中蛋白质的研究

摘    要:采用酶法将马铃薯薯渣中的蛋白质成分除去,通过对几种酶的使用,确定使用木瓜蛋白酶去蛋白质成分效果最佳,并经过反复试验确定酶解反应单因素的最佳条件为:酶溶液质量分数为0.20%,料液比13∶1。酶解时间1 h,pH为6.5,温度65℃。对比一次酶解和二次酶解,一次酶解率在51.36%,二次酶解率可达到93.56%。所以最终选择二次酶解。

Abstract:The paper removs the proteins in the potatos slag by enzymatic extraction.Through the use of several enzymes,making sure using papain to be the best effect.And after many experiments for single factor,determined the best condition of zymolysing reaction:the enzyme solution is 0.20 percent,Material liquid proportion 13∶1.time 1 h,pH6.5,temperature 65 ℃.The first enzyme solution and the second enzyme solution made a contrast,the first zymolysing rate was 51.36%.the Second zymolysing rate can reach 93.56%.So choose the second enzyme solution finally.
