| 摘 要： | 随着对小肽生理活性的深入认识及其抗氧化重要性的发现,动植物蛋白水解物的抗氧化活性的研究受到了关注。介绍了肽的抗氧化性测定方法,综述了以动植物蛋白为原料,制备抗氧化肽、分离纯化的方法,及其氨基酸组成。
