不同产地绿茶主要成分含量及质量指标的差异分析

摘    要:为了客观地评价不同主产地绿茶品质的差异性,统计分析了四川、湖北、福建的16个绿茶样品的茶多酚、茶多糖、茶氨酸、灰分、水分、重金属、农药残留含量的差异。结果表明,四川产绿茶的茶氨酸含量显著高于湖北,3个省份的茶多酚、茶多糖含量差异不显著;茶多酚、茶多糖、茶氨酸含量最高的产地分别为宜宾市、峨眉山市、眉山市(编号3)。湖北产绿茶的灰分含量显著高于四川和福建,水分含量显著低于四川;不同主产地绿茶的重金属含量和农药残留量均符合食品安全国家标准。研究结果将为绿茶原料的产地选择、品质评价等提供技术依据。

Abstract:To evaluate objectively the quality differences of green tea from different producing areas,the research has analyzed statistically the contents of polyphenols,polysaccharides,theanine,ash,moisture,heavy metals and pesticide residues in green tea samples from Sichuan,Hubei and Fujian provinces.The results showed that the content of theanine in green tea that produced in Sichuan was significantly higher than that in Hubei provinces,and it was not significantly different in the content of tea polyphenols and polysaccharide in samples from the three provinces.The producing areas with the highest contents of tea polyphenols,tea polysaccharide and theanine were Yibin,Emeishan and Meishan(No.3).The ash contents of green tea from Hubei were higher significantly than that from Sichuan and Fujian,and were lower significantly than that from Sichuan on the aspect of mositure.The contents of heavy metals and pesticide residues in green tea from different main producing areas that were in line with the national food safety standards.The results of this study would provide technical basis for the selection of green tea origin and quality evaluation.
