菜地硝酸盐累积现状、影响及其解决出路

摘    要:蔬菜是人们日常生活中不可缺少的副食品,但其是一种易富集硝酸盐的作物,而蔬菜体内硝酸盐的累积对人体健康有危害作用。大量研究表明,氮肥过量施用造成土壤硝酸盐积累是蔬菜硝酸盐含量超标的主要原因,各国学者曾先后采用不同的方法,从不同角度来研究硝酸盐产生的途径及解决办法,但大多研究比较分散,本文总结了菜地硝酸盐累积的现状以及对地下水、蔬菜、大气、人体的影响,并就此提出了选育低硝酸盐累积量的蔬菜品种、科学的栽培管理措施等解决方法。

Abstract:Vegetables are the most important things without which people cannot survive in daily life.But it is a kind of crop that contain rich nitrate.However, the nitrate accumulation does great harm to people’s health.Some researches show that, using too much nitrogenous fertilizer which cause the soil nitrate accumulation is the main reason why the vegetables contain too much nitrate accumulation. Scholars from many states have studied the methods and solutions from different ways and different points of view, but most of them dispersed relatively, this paper summed up the status of the nitrate accumulation and the impact to groundwater,vegetables, atmosphere and human body.then make some useful solutions such as select the low nitrate accumulation vegetables and applying scientific cultivation and management measures.
