摘    要:本文介绍了耐高温酵母的耐热机制,同时总结了提高酿酒酵母耐热性的技术研究进展,主要包括高温驯化、自然选育、诱变育种、原生质体融合育种及 Genome shuffling技术,重点介绍了 Genome shuffling术的原理及其在选育耐高温酵母应用中的优势,该技术与传统微生物育种技术、现代生物技术相结合,将大大提高耐高温乙醇酵母菌种的选育效率。

Abstract:its thermo-resistant mechanism were introduced in this paper.Besides.the research progress in the breeding of heat-resistance ethanol yeast by high temperature domestication、natural breeding、mutation breeding、protoplast infusion and genome shuffling Was illustrated,especially the theory of genome shuffling techniques and its advantages in the breeding of heat-resistance ethanol yeast were induced.The combination of genome shuffling techniques、traditional microbial breeding techniques and modem biotech could greatly increase breeding efficiency of heat-resistance ethanol yeast.
