灰树花与白灰树花子实体蛋白质营养评价

摘    要:以3种不同废弃资源培养料栽培灰树花和5种不同废料栽培白灰树花的子实体为试验材料,采用国际通用的蛋白质营养评价方法,分析其蛋白质的营养价值。结果表明,(1)灰树花和白灰树花子实体蛋白质含量高(平均含量22.95%),氨基酸总量平均值为17.51%,二者均高于香菇子实体,但不同培养料差别较大;EAA/TAA在0.39~0.44范围内,EAA/NEAA平均值高达0.75,符合FAO/WHO提出的理想蛋白模式。(2)灰树花和白灰树花子实体CS、AAS、EAAI和BV均优于香菇,且栽培原料对这些指标无显著影响;在NI方面,木屑、玉米秸秆和桑枝栽培的灰树花和白灰树花优于香菇,棉籽壳和羊蹄甲栽培原料生产的白灰树花劣于香菇;灰树花和白灰树花SRCAA指标低于略低于香菇,但远高于草菇和茶薪菇。

Abstract:The protein nutritional value of Grifola frondosa fruitbodies cultivated by three kinds of waste-resource composts and white Grifola frondosa fruitbodies cultivated by five kinds of waste-resource composts were analysed with the international protein evaluation methods.The results showed that:(1) The protein contents of Grifola frondosa and white Grifola frondosa fruitbodies were high (average protein content was 22.95%),average amino acid total quantity was 17.51%,and these were higher than L.edode fruit bodies but obviously different among Grifola frondosa and white Grifola frondosa cultivated by different composts.EAA/TAA value was 0.39-0.44,the EAA/NEAA value was 0.75,conforms to the requirement of FAO/WHO ideal protein.(2) In CS 、 AAS 、 EAAI and BV,Grifola frondosa and white Grifola frondosa were better than L.edode,and composts did not obvious affect on these indexes;in NI,Grifola frondosa and white Grifola frondosa cultivated by sawdust,com stalk and mulberry branch composts were better than L.edode,and white Grifola frondosa cultivated by cottonseed hull and Bauhinia variegata composts worse than L.edode;in SRCAA all Grifola frondosa and white Grifola frondosa were slightly lower than L.edode,and outclass straw mushroom and Agrocybe Chaxingu huang.
