摘    要:为明确13个海棠果品种果实营养成分指标,揭示海棠果巨大的开发应用潜力,测定了不同品种海棠果总酸、维生素C、可溶性固形物、可滴定酸、还原糖、总糖、果胶、单宁含量,应用统计分析软件进行聚类分析。研究发现‘红勋1号’和‘冰心2号’营养成分丰富,并具有高酸度的优势,最适合用作果汁生产的原料。研究初步明确了各品种海棠果营养成分及开发利用用途,为进一步开发海棠果的应用价值提供科学依据。

Quality Determination of Different Malus prunifolia and Cluster Analysis

Abstract:In order to define the nutrient indicators of 13 Malus prunifolia fruit varieties, and reveal the huge development and application potentials of Malus prunifolia, this paper identified different Malus prunifolia' s totalacid, Vc, soluble solids, organic acids, reducing sugar, total sugar, pectin and tannin contents, and applied the statistical analysis software to the cluster analysis. The study found that 'Hongxun 1' and 'Bingxin 2' had rich nutrients and the advantage of high acidity, so they were the best for raw material producing the fruit juice. This paper preliminarily defined the nutrients and development and application purposes of different Malus prunifolia, so as to provide scientific basis for further development of Malus prunifolia' s application value.
