灌水和生长调节剂对有色小麦产量和品质的影响

摘    要:以有色小麦皖麦38、绿麦1号和kz6061为材料,在大田条件下,研究灌水和生长调节剂对有色小麦产量和品质的影响。结果表明,灌水处理对有色小麦千粒重、容重、籽粒产量和蛋白质产量影响不显著,灌3水较灌2水处理显著提高有色小麦醇溶蛋白含量,而显著降低干、湿面筋含量。不同粒色小麦的籽粒产量和蛋白质产量差异显著,kz6061的籽粒产量和蛋白质产量均显著高于皖麦38和绿麦1号。蛋白质及其组分含量、沉降值、面筋含量和面筋指数在不同粒色小麦中差异显著,沉降值和面筋指数以皖麦38最高,干、湿面筋含量以kz6061最高。生长调节剂处理对皖麦38的清蛋白和球蛋白,绿麦1号的球蛋白,kz6061的清蛋白、球蛋白、醇溶蛋白和谷蛋白含量均有一定影响,对有色小麦面筋指数亦有显著影响。

Abstract:In order to investigate effect of irrigation and growth regulator on yield and quality of different grain color wheats, field experiments using three cultivars of Wanmai 38 (white grain), Lvmai 1 (green grain) and kz6061 (purple grain) under three irrigation treatments and two growth regulator treatments were conducted in experiment site of the Institute of Crop Sciences, Chinese Academy of Agricultural Science in Beijing in 2008-2009 growth season. The result showed that irrigation treatments had no significant effect on 1000-grain weight, test weight, grain yield and protein yield of winter wheat of different grain colors, while A1 treatment (watering 3 times) significantly increased the gliadin content, and significantly decreased dry and wet gluten content compared with A2 treatment (watering 2 times). The grain yield and protein yield were significantly different among cultivars of different grain colors. The grain yield and protein yield of kz6061 were significantly higher than those of Wanmai 38 or Lvmai 1. Total protein and its component contents, sedimentation value, gluten content and gluten index were significantly different among cultivars of different grain colors. Among three cultivars, Wanmai 38 had the highest sedimentation value and gluten index, while kz6061 had the highest dry and wet gluten. Growth regulator treatment had significant effect on albumin and globulin content of Wanmai 38, globulin content of Lvmai 1, and albumin, globulin, gliadin and glutenin content of kz6061, and also had significant effect on gluten index of different grain colors wheat.
