| 摘 要： | 为了详尽了解太湖流域苏南村镇居民的Se营养状况,采用分层整群随机抽样方法调查了苏南村镇居民的各种食物摄入量,并随机采购其农贸市场出售的植物性食物、动物性食物以及随机对应采集了居民头发样,采用原子荧光光度法测定了各种样品的含Se量.结果表明:苏南村镇动物性食物含Se量高于植物性食物,动物性食品中,虾的含Se量最高;禾谷类和豆类食物的含Se量比蔬菜高.苏南村镇居民人均Se摄入量为34.7 μg/天,低于中国营养学会推荐的Se摄入量的最低限值50μg/天,头发Se含量平均为336.0 μg/kg,居民膳食Se摄入量和头发Se含量有显著的相关性,低于全国的平均值;居民头发Se含量比广州、上海等地居民低很多.上述结果表明,日常膳食不能满足人体对Se的最低需要,有待开发高效安全的补Se食品.
