| 摘 要： | 不合理的施肥和环境因素等都可引起硝酸盐在蔬菜中的过量富集,从而影响蔬菜的品质,影响消费者的身体健康.综述了近年来国内外有关蔬菜中硝酸盐含量的影响因素及其调控措施的研究进展.

| Abstract: | Excessive nitrate accumulation in vegetables caused by unreasonable fertilization and environmental factors,etc,which impairs the health of consumers. In this paper the research progress in the influencing factors of nitrate content in vegetables and its control measures at home and abroad were presented. |
