| 摘 要： | 近年的研究表明,番茄红素是一种重要的类胡萝卜素,其功能在许多方面优于β-胡萝卜素。番茄红素不仅是一种天然食用色素,而且在有效预防各种疾病、防癌抗癌和抗衰老等方面,显示出其生物学功能作用。重点介绍了番茄红素的制备以及在生物学方面的应用情况,并对番茄红素的应用开发前景作出展望。

| Abstract: | The recent study suggests that lycopene is an important carotenoid,whose function is better than β-carotene in many respects. It is not only a kind of natural edible pigment,but also showing its biology function in preventing from various diseases effectively,such as the anti-cancer,the anti-decrepitude,etc. This essay introduces the preparation and the biology application of lycopene,and has an outlook to the application of lycopene. |
