摘    要:根据Box-Behnken中心组合试验设计原理,在单因素试验的基础上,采用响应面分析法,建立了生产高不饱和脂肪酸大豆油脂的二次多项数学模型,并以产出大豆油脂的碘值为响应值做响应面和等高线,考察了结晶时间、结晶温度、回调时间和回调温度对不饱和脂肪酸含量的影响。通过自制的油脂结晶器,制得富含高不饱和脂肪酸的大豆油脂。得出最佳工艺参数为:降温速度5℃/h,结晶温度-15℃,结晶时间24h,搅拌速度20rpm。利用温度回调至-5℃的方法,使所得油脂产品高不饱和脂肪酸含量达到86.41%。

Abstract:According to Box-Behnken central composite experimental design principles,and based on the single-factor test,the mathematical model for producing high-unsaturated fatty acids soybean oil was established by response surface methodology,while the influences of crystallization time,crystallization temperature,the callback time and the callback temperature on unsaturated fatty acids content in soybean oil were investigated by using the soybean oil iodine value as the response surface contour.With homemade grease facility in producing unsaturated fatty acids soybean oil,we found the following optimum parameters:the cooling rate of 5℃/h,the crystallization temperature of-15℃,crystallization time 24 h,stirring speed of 20 rpm.Callback temperature to-5℃,enable produce 86.4% of high unsaturated fatty acid content in grease products.
