电子鼻在乳制品中的应用

摘    要:介绍了电子鼻的基本组成和工作原理,总结了电子鼻在乳制品中的应用。对电子鼻在干酪种类的区分、不同保质期乳制品的识别、乳中微生物的检测、乳中挥发性物质的分析、乳制品产区的识别以及掺假牛奶的检测等方面的应用进行了综述。

Abstract:The basic components and principle of electronic nose are introduced in this paper.And the applications of electronic nose in dairy products are reviewed.The differentiation of different kinds of cheese,the distinguish of milk with different shelf-lives,the detection of microbes in dairy products,the analysis of volatile matters in dairy products,milk with different geographic origin and detection of the milk with adulteration are discussed in detail.
