大棚生姜VC·硝酸盐·亚硝酸盐·总糖·有机酸含量测定

摘    要:对大棚生姜中的营养成分VC、总糖、有机酸进行了测定,同时也测定了生姜中的有害成分硝酸盐、亚硝酸盐的含量。结果显示:大棚生姜中的VC含量为111.4 mg/g;水溶性总糖含量低,为0.56%;而有机酸含量较高,特别是酒石酸含量很高,达59.146 mg/g;亚硝酸盐含量较低,硝酸盐含量严重超标,达39 338.5 mg/kg,应限量熟食。

Abstract:The content of nitrate,nitrite,VC,organic acid and total Sugar of Zingiber officinale in plastic greenhouse was determined.The results and conclusions were as follows:The content of VC was 111.4 mg/g and the content of total Sugar and Nitrite was low;But the content of organic acid,especially,tartaric acid was high,59.146 mg/g.the content of Nitrate was much higher than international food criterion'.
