摘    要:测定了5种不同含水量对虎奶菇菌核蛋白质营养价值的影响,结果表明,以65%的含水量的培养料栽培虎奶菇菌核的蛋白质氨基酸评分、化学评分、必需氨基酸指数和生物价分别为21.82,18.6,79.03和74.44,均居5种含水量处理的第1位;营养指数和氨基酸比值系数分别为10.0和19.8,均居第2位。这些结果说明以65%的含水量栽培虎奶菇菌核蛋白质营养价值较高。

Abstract:Pleurotus tuber Regium was cultured on media with a water content of 50%, 55%, 60%, 65% and 70% and the nutritional value of its sclerotia was investigated. The amino acid score (AAS), chemical score (CS), essential amino acid index (EAAI) and biological valence (BV) of the protein in the sclerotia were the highest in the P.tuber culture in the medium with a water content of 65%, being 21.82, 18.6, 79.03 and 74.44, respectively. The nutritional index (NI) of this treatment was 10.0 and its score of ratio coefficient of amino acid (SRCAA) was 19.8, ranking second in the 5 treatments. It is therefore recommended that P.tuber be cultured in a medium with a water content of 65%.
