掺假蜂蜜识别技术的研究进展

摘    要:针对常见的蜂蜜添加糖浆、淀粉酶、果胶等掺假现象,综述了近年国内外检测蜂蜜掺杂物的技术,介绍了红外、荧光等光谱法、高效液相色谱法、同位素比值质谱法及一些理化方法在蜂蜜中淀粉酶值及各种掺杂糖浆检测上的应用及研究概况,为蜂蜜品质及掺假的鉴别研究提供参考。

Abstract:Because to adulteration phenomenon by adding syrup,amylase,pectin in honey,the paper reviewed the techniques to detect adulteration at home and abroad in recent years.And the application and progress of infrared fluorescence spectrometry,high performance liquid chromatography,isotope ratio mass spectrometryand,some physical and chemical methods for detection of amylase value and syrup in the adulteration honey were introduced to provide some references for the identification of honey quality and adulteration.
